I believe I have mentioned this before but I really struggle with eating breakfast and I think I may have found something that really works for me. Everyone says that breakfast is the most important meal of the day and this is true, when I don’t eat anything for breakfast I am usually starving by 10 in the morning which is not healthy. I was recently looking on Pinterest for some quick and easy breakfast ideas and I saw yogurt parfait cups as one of the top Pins and thought “I can do that! Just a few jars and simple ingredients.”
As per usual I went to my favorite store, World Market, to get the most adorable and durable jars and then went grocery shopping where I would get nothing but healthy ingredients. For protein I picked up some Granola mix with almonds and honey and for yogurt just a plain vanilla flavor. I then walked over to the produce department where I grabbed the most vibrant looking raspberries and a small thing of blueberries and a few bananas to slice up. As a small treat to myself I may or may not have grabbed a tiny bag of mini chocolate chips to top it off. In my defense chocolate is protein!
Once I got home I went to work! It was so easy and only took me about 5 minutes and I made two jars to start with. I chose to layer each item just so mixing would be more simple and by doing so the granola stayed crispy and didn’t become soggy over night. Everything was in perfect increments as well and would easily hold me over until lunch time. The reason why I struggle with breakfast so much I think is because I always work morning shifts such as 6 a.m. and I don’t want to wake up extra early to eat so this was a perfect on the go meal for me. All I had to do was grab a spoon and be on my way.

Drizzling honey on top was the perfect amount of sweetness and paired nicely with all the other ingredients as well. I know the chocolate chips aren’t the most healthy thing but a tiny bit can’t hurt.
I honestly believe that eating breakfast of some kind does effect your day and how you feel physically and mentally. Starving yourself and then eating is not healthy and to do that day after day just makes one feel sick a lot. Thanks to this I don’t feel sick to my stomach with hunger anymore and I hope this inspires others to eat breakfast or not skip a meal anymore. ♥
